Instructions:

For the chicken burger with strawberries, first cut the chicken breasts in half lengthwise, but not all the way apart. Unfold the chicken breasts (“butterfly cut”) and rub with the spices and some salt.

Cut the crackers in half horizontally. Remove the stalk from the strawberries, cut into thin slices and season with 2 tablespoons of olive oil, salt and pepper.

For the mayonnaise, beat the egg with a hand blender until foamy. Add the mustard and vinegar and slowly pour in the oil while mixing constantly. Once the mayonnaise has a good consistency, mix in the chopped nuts and season with a little salt and pepper.

Fry the chicken fillets in a pan or on the grill for about 4 minutes on both sides. Bake the halved Weckerln in the oven or on the grill until crispy.

Season the washed, drained arugula with a little vinegar, oil, salt and pepper.

Spread the arugula on the bun bottoms, place the chicken fillet on top and top with the strawberries. Spread mayonnaise on the tops of the buns and finish off the chicken burger with strawberries.
