For the sunken plum cake, wash the plums, cut them in half, pit them and drain them. Knead a crumble dough from flour, baking powder, 300 g sugar, 1 packet vanilla sugar, salt, cinnamon, the almonds, one egg yolk and the butter.

Press 3/4 of the crumble into the pan as a base and bake the base in a preheated oven at 150 degrees for about 15 minutes. Then let it cool down, mix the crème fraiche with the eggs, 1 packet of vanilla sugar, 125 g sugar and the custard powder.

Score the plums three times on the top edge and place them close together on the base, pour the glaze over them and sprinkle the remaining crumble on top. Bake the cake for about 45 minutes at 150 degrees.

The Sunken Plum Cake is sufficient for one baking sheet or 2 springform pans with a diameter of 26 cm.
