Mix 200 g of flour with the spices, baking powder and salt.

Preheat the oven to 180 °C.

In a second bowl, prepare the butter mixture. To do this, beat the butter, brown sugar and 6 tsp sugar with a hand mixer until creamy. One by one, beat in the 2 eggs and add the maple syrup.

Now mix the butter mixture with the flour and spice mixture.

Butter a shallow baking pan or deep baking sheet and lightly dust with flour. Pour gingerbread mixture about 1 inch thick into the pan and sprinkle the mixture with the remaining sugar before placing the tray in the oven.

Bake for about 20 minutes until golden brown.

Remove the tray from the oven and allow the gingerbread to cool briefly.

Now use a Santa cookie cutter to cut out Santa Clauses and decorate as desired.
