Instructions:

Soak mushrooms in hot water for 20 minutes. Clean carrots and peppers, rinse and cut into thin strips. Rinse leek, cut into fine rings. Remove peel from garlic and chop finely. Rinse bean sprouts. Drain mushrooms and chop coarsely.

Heat oil and fry garlic in it. Add the prepared vegetables and sauté briefly. Season with salt, pepper and soy sauce. Cool down a bit. Put 2 tablespoons of vegetable filling on a dough sheet form, fold and roll up. Brush edges of dough with water and press smooth.

For the sauce, peel onions, cut into fine wedges. Peel and chop garlic. Heat oil in a saucepan. Sauté onions and garlic in it, add vegetable juice and let it bubble up. Sprinkle in sauce thickener, let it boil up repeatedly. Season with vinegar essence, sugar and sambal oelek.

Heat oil for frying, bake spring rolls in it. Serve with sauce.
