For the potato casserole, cut bacon into strips. Peel onion, cut in half and also cut into strips. Peel garlic, cut into fine slices. Fry bacon in a non-stick pan with the onions until crispy, adding the garlic briefly at the end. Set pan aside.

Peel potatoes, cut into ½ cm thick slices, place in greased unperforated steamer basket with bacon onions including drippings and pre-cook (at 100°C for 5 minutes).

In the meantime, clean the peppers, remove the seeds and cut into thin strips.

Pluck rosemary needles and chop finely, whisk with eggs, salt and pepper and add to the potato mixture with the bell pepper strips. Cover with a lid or aluminum foil. Allow the casserole to set (at 100°C for 25 minutes).

Serve the potato casserole hot or cold cut into pieces.
