Boil the selch roller in hot water for about 90 minutes. Then remove the net and let cool.

Boil the potato and let it cool down a bit.

Then peel and mash with a potato masher. Add flour and salt and knead into a dough. Add a little water (about 50 ml). Let the potato dough rest for a while.

Mince the smoked meat or cut it into small, fine strips.

Melt butter in a pan and sauté garlic and onions.

Then add the minced smoked meat and let it fry as well. Let it cool down a bit.

Add eggs and breadcrumbs and mix everything to a homogeneous mass. Season with marjoram, salt and pepper.

Cut small pieces from the potato dough. Roll them out a bit, spoon on the seltzer filling and shape the dough into a dumpling all around.

Place in boiling water, let it boil once and then simmer the smoked meat dumplings for about 10 minutes.
