Remove the skin from the clementines, remove the white skins, cut the fruit into wedges and halve them according to size. Rinse the grapes, cut them in half and remove the seeds. Remove the skin from the pears, remove the core, cut the fruit into cubes and sprinkle with the juice of one lemon. Rinse the tomatoes, cut them into eighths and cut into cubes. Clean the peppers, cut them into eighths and into narrow strips. Rinse the green leaf lettuce and cut it 1 cm wide. Remove the skin from the celery, finely grate the tender part. Lightly rinse the cress, squeeze very lightly in kitchen paper. Mix all ingredients – except cress – lightly with two forks.
Stir all sauce ingredients well with a whisk and season spicily. Just before serving, fold the sauce into the lettuce and sprinkle on the cress.
