Pizza Wreath with Wild Herb Pesto

For the pizza wreath, prepare the dough according to the basic pizza dough recipe.

For the pesto, wash wild garlic and herbs, spin dry and chop coarsely. Grate the Parmesan cheese and finely chop the pine nuts. Wild garlic, herbs,

pine nuts and Parmesan. Pour in oil and continue to grind until a creamy mass is formed, add salt and pepper.

Roll out yeast dough on a floured work surface into a rectangle and spread with the pesto.

Roll up into a roulade. Butter a baking sheet and place the roulade on it in a circle, pressing the ends together well.

Using kitchen scissors, cut the ring about every 2 inches. Pull the resulting strips apart slightly to reveal the filling. Cover with a tea towel and let rise for 45 minutes.

Sprinkle the pizza ring with Parmesan and bake in a preheated oven at 180 °C for about 25 minutes until golden brown.
