Instructions:

Cover a baking tray with parchment paper and grease it. Preheat oven to 160 degrees.

Meanwhile, beat eggs and salt for 5 minutes until pale and thick. Add flour and Sbrinz. Last but not least add butter. Spread the dough on the prepared baking sheet. Bake immediately in the oven at 160 degrees Celsius on the second lowest rack for 20 minutes.

In the meantime, grease a second piece of parchment paper. Turn the sponge cake out onto it while it is still hot and peel off the “old” paper. Weight down the sponge with the baking sheet and cool around it, this way the dough will stay nice and wet.

To prepare the filling, whip light butter or alternatively butter for 5 min. to an airy cream. Grate the Schabziger on a cheese grater.

Spread the mixture on the cooled sponge cake and roll it up from both long sides towards the center. Split the roulade lengthwise in the middle to make two rolls.

Cut these into 4 cm wide pieces and wrap each with a slice of bacon. Cut out with a wooden skewer and stick an olive on each. Leave to cool until serving.

Our tip: Use a deliciously spicy bacon for a delicious touch!
