For the farmer’s toast, cover the brown bread with cheese and melt the cheese briefly in the microwave, or in the oven. Heat some oil in a small pan and crack in the eggs.

Cook the fried eggs until all the egg whites, but not yet all the yolks, have set. Place the smoked salmon and the warm fried eggs on the bread and serve.
