For the black pudding omelet, cut the cooked potatoes into flakes and the black pudding into 1 cm thick slices. Fry both in hot butter. Turn, add onions and bacon strips and fry.

Mix the eggs with sour cream, salt, pepper and freshly chopped marjoram and pour the mixture over the black pudding and potatoes. Fry the sausage omelet on both sides, turning once, until light brown.
