For the tangerine pizza, separate the eggs. Place the puff pastry on a floured work surface, but it is best not to roll it out so that it is not too thin. Cut into 6-8 equal round slices or rectangles.

Place on a baking sheet lined with parchment paper and bead the edge of each pizza between your fingers. Let rest briefly.

Preheat oven to 180 °C. Peel the tangerines, separate into fillets and peel off the skin. Divide into small pieces, if they did not fall apart anyway during peeling.

Spread puff pastry with jam. Spread tangerines on top and sprinkle with chopped pistachios or raisins. Brush edges of pastry with egg yolk and bake in hot oven for 15-20 minutes.

Meanwhile, beat egg whites with sugar until stiff peaks form. About 5-7 minutes before the end of the baking time, spread on top of the mandarins and bake along, making sure the snow does not get too dark. (If it browns too quickly, cover with aluminum foil).

Lift out the mandarin pizza and serve warm or cold.
