Instructions:

For the spare ribs with plum sauce, peel the garlic and crush it finely in a mortar with the salt. Add 6 tablespoons of soy sauce, the honey and pepper, and finally fold in the soybean oil to make a creamy paste.

Rub the ribs with the paste and place them side by side in a roasting pan. Roast in the preheated oven on the middle shelf at 180 degrees for 30 minutes. Drizzle the ribs often with their juices so that they do not become dry.

Turn the ribs over, add 125 ml hot water and roast for another 30 minutes. Keep drizzling with gravy.

Meanwhile, mix the plum puree with the remaining soy sauce, tomato ketchup, vinegar, Zucher and cayenne pepper. Bring the sauce to a boil just before serving and simmer for 5 minutes.

Serve the Spareribs with Plum Sauce with their gravy and add the plum sauce.
