Fried Feta Cheese with Peach Ragout

Instructions:

Blanch peaches, rinse, skin, pit, cut into wedges. Caramelize sugar. Pith of vanilla bean with crumbled dried chili pepper and juice of one lemon to caramel form. Make 2 min at low temperature. Fold in peaches, do 1 min on low. Sprinkle with lemon balm. Cut feta cheese into 2 cm wide sticks. Turn to other side in flour then in beaten eggs and finally in breadcrumbs. Bake for 3-4 min in hot oil at 160 °C until done. Serve with the peach ragout.
