For the apple pie shortcake, beat the butter with the sugar and vanilla bean pulp until fluffy, then add the egg yolks and continue beating, stir in the sifted flour on low speed in a food processor.For the custard, bring the milk, sugar and vanilla bean pulp to a boil, mix the cornstarch with cold water. When the milk boils, bind with the cornstarch and cook for another 2 to 3 minutes, stirring constantly.

For the apple pie mixture, peel, quarter and core the apples and mix with the sugar, rum and cinnamon, cook in a hot pan for 10 minutes, stirring several times.

For the crumble, knead all the ingredients with your hands in a bowl until small lumps form.

For the apple pie, butter and flour a baking sheet and line it to the edges with the shortbread. Pour the vanilla pudding into the shortcrust pastry and pour the apple mixture on top and sprinkle generously with crumble. Bake the apple pie in the preheated oven at 160°C convection oven for 45 minutes.
