For the pumpkin pie, roll out the dough and spread it in a round pie dish.

Steam the diced pumpkin flesh or boil it in very little water until soft, so that it remains dry and aromatic. After cooking, pass through a sieve.

Pass the sugar through a sieve, mix the pumpkin mixture, milk and eggs, then add the juice of one lemon, the grated lemon peel and the other spices. Pour the mixture into the mold lined with the pastry.

Bake the pumpkin pie in the oven for 15 min, reduce the temperature and bake for another 20-25 min.

Serve the pumpkin pie hot or cold.
