Steam the finely chopped vegetables in butter until translucent, fill with beef broth, add the drained peas, bacon and pork shank and cook for 50 minutes. Add the potatoes and cook until soft. Season sparingly with salt. Sprinkle the soup with chives.

Our tip: Use bacon with a fine smoky note!
