Apple Pancake with Fresh Walnuts

Mix flour with salt, milk, vanilla sugar, lemon zest and a few drops of rum until smooth. Gently fold in the eggs (but do not whisk!). Peel the apple, quarter it and cut out the core. Cut the wedges into slices. Crack nuts, scoop out the cores.

Heat butter slightly in an ovenproof dish on the kitchen stove and put the dough in it. Put it into the oven preheated to 180 °C, bake the dough briefly and turn it to the other side. When the dough has taken on a brownish color, tear it into small pieces with two forks.

Put half of the butter with half of the sugar in the center of the pancake and caramelize lightly.

Melt the remaining butter with the rest of the sugar in a non-stick frying pan and let it brown a little. Add the apple slices and glaze quickly. Once the apple slices have taken on color, add the walnuts and raisins and toss briefly.

Divide the Schmarren evenly on plates and serve with the apple-walnut-raisin mixture.

Tip: When caramelizing the apple slices, make sure that they do not become too soft, otherwise the apple flavor will be lost.
