For the cress soup, first puree the salt, balsamic vinegar, white wine, pepper, sugar and 1/2 tablespoon coconut milk and arrange in a bowl until cooled.

Sauté the snow peas with the thinly peeled carrot strips in olive oil, season with salt and pepper and garnish on top of the cress soup.
