Pour boiling hot water over the rock candy and let it melt, stirring frequently.

Cream the butter with the eggs. Add the cooled candy solution to the butter mixture form and stir. Now sift the flour with the ground spices, add to the egg cream form, stir with a whisk until smooth and leave to rise for 1 hour.

For baking, fill the dough with a small tablespoon on the well preheated New Year’s iron and bake until golden brown.

Then loosen the New Year’s cakes from the pan with a kitchen knife, place on a surface and shape into a roll with a wooden spoon handle. Filled with whipped cream, the fresh New Year’s cakes taste exceptionally good.
