Instructions:

A simple but delicious cake recipe:

1) Knead together vanilla sugar, flour, sugar, fat and eggs with the kneading blades of the hand mixer. Knead on top with your hands until smooth. Cover and cool for 1 hour.

2) Sprinkle raisins with rum. Remove peel from apples, quarter and core, cut into narrow slices. Mix with juice of one lemon, drained raisins, sugar and almond kernels.

3) Roll out half of the dough on a greased baking pan (only 1/2 baking sheet) or half of the dough on a greased glass baking and serving dish (27 x 32 cm). Press the dough up around the edge (for 1/2 baking tray, use aluminum foil), pierce the bottom more often and sprinkle with breadcrumbs.

4) Spread apple mixture evenly on top. Spread rest of dough evenly on top. Roll out remaining dough thinly on little flour and place over apple filling. Cut excess dough into small pieces and press edges smooth. Roll out leftover dough and cut into strips.

5) Separate the eggs, brush the underside of the strips with egg white. Decorate the cake with it. Bake in the heated oven (electric oven, 200 °C / convection oven 175 °C / gas mark 3) for approx. 45 minutes.

6) Stir egg yolk and milk and brush the cake with it about 10 minutes before the end of the baking time. Sprinkle with hail sugar and bake until done. Cool the cake.
