For the mango sheet cake, first line a baking tray with baking paper. Preheat the baking tray to 180 °C. Melt the butter and allow to cool briefly.

In the meantime, peel the mango and cut it into pieces.

Beat the butter with the sugar and eggs until fluffy. Add vanilla sugar and continue beating. Sift baking powder with flour and fold in carefully.

Spread the dough on the baking tray and smooth it down. Spread the mango on top. Bake for about 25 minutes (test with chopsticks).

Remove mango sheet cake, let cool, remove from baking paper and cut into pieces.
