For the orange zabaglione, grate some zest from one orange and save for garnish.

Peel and slice enough oranges to line the bowl for serving.

In a saucepan over medium heat, dissolve the brown sugar in 2 tablespoons of water. Boil the syrup, stirring, for 2 minutes. Set aside to cool, stirring occasionally.

In a bowl, beat egg yolks, rum and nutmeg until yolks are thick and pale. Continue beating the egg mixture over a water bath until thick, then remove from the water bath again and beat until cold.

Beat the egg whites until stiff and fold in the sugar syrup. Beat the whipped cream until stiff and fold into the egg yolk mixture. Fold in the egg white and syrup mixture and the chocolate.

Pour the mixture into the bowl lined with oranges and decorate the orange zabaglione chocolate shavings.
