Beat the butter, powdered sugar and vanilla sugar until very thick and creamy.

Gradually add the yolks and beat well again (works best with a food processor or hand mixer). When the mixture is nice and creamy, carefully fold in the remaining ingredients, finally gently fold in the stiffly beaten snow.

Fill the pudding mixture into buttered portion molds sprinkled with biscuit crumbs and place in a prepared hot water bath. Cook in the oven at about 180 degrees for 30 to 35 minutes.

For the orange mousse:

Beat the egg, vanilla sugar, sugar, egg yolks and orange zest over steam until very fluffy, remove from steam and gently mix in the remaining ingredients. Serve immediately, as the foam will collapse relatively quickly.

For the orange salad:

Peel the oranges so that the white membranes are also removed, fillet all the segments, collecting the juice. Marinate in their own juice with the liqueur. If the oranges are very sour, season with honey or maple syrup.

Turn the spice puddings out of the molds while still hot, arrange on plates with orange mousse and orange fillets. Garnish with chocolate shavings and a lemon balm leaf.
