For the strawberry zabaglione, rinse and clean the strawberries and cut them into slices. Put some aside.

Mix the egg yolks, egg, sugar and Amaretto well and whisk in a hot water bath until thick and fluffy. Season to taste with a little lemon juice. Divide the strawberries evenly among dessert bowls and pour the zabaglione over them.

For the strawberry zabaglione, decorate the strawberries, pistachios and lemon balm.
