A more wonderful asparagus recipe:

Peel asparagus, rinse, cut woody ends into small pieces. Boil water with salt and sugar, put in asparagus, let it boil, let it simmer for 16 to 18 min, keep warm in the broth.

Sauce

Melt the butter.

Boil shallots, juice, orange peel, juice of one lemon and sugar to half the liquid.

Strain and cool a little, stir through with egg yolks – stirring vigorously. Beat in a hot – but not boiling – water bath until the mixture is creamy and the yolks no longer taste raw.

Remove from water bath and fold in liquid butter drop by drop.

Season with salt, pepper and cayenne.

Blanch orange peel strips in boiling water for 3 to 4 minutes, drain.

Drain asparagus, serve with sauce and garnish with orange peel strips.
