For the pears with mulled wine zabaglione, peel the pears, quarter them and remove the core.

In a small saucepan, steam just covered with water with 2 tablespoons sugar, lemon juice and lemon zest until firm to the bite. Allow to cool.

Boil red wine with cinnamon stick, cloves and 2 tablespoons sugar and let cool.

Beat the egg yolks well with the remaining sugar and gradually add the wine.

Divide the pears among dessert plates and pour the zabaglione over them.

Serve the pears with mulled wine zabaglione immediately sprinkled with gingerbread crumbs.
