Soak the beans in 3/4 liter of water for one night. Leave to soak with the soaking water for about 45 minutes. Cut the onions into rings and the bacon into pieces. Drain the beans, reserving the water. Heat salt, maple syrup, sugar, pepper and mustard powder, extinguish with bean water, boil again. Stir in onions, beans and bacon. Cover and bake in heated oven at 200 degrees for about 2 1/2 hours. Sprinkle with parsley.
