For couscous sticks, put couscous with water in a saucepan and bring to a boil briefly. Add the sea salt and let it steep with the lid closed at low temperature for about 15 minutes. Remove saucepan from heat and let cool.

Add the curd to the couscous, season with nutmeg, basil and chili and mix everything together well. Let the couscous mixture sit for 10-15 minutes.

Using 1 soup spoon, take some of the mixture and place on a board. Wet two knives and press the couscous mound together with them. Shape into rectangular sticks. If the couscous mixture is too sticky, just let it sit a bit longer.

Put the sesame seeds on a plate, roll the couscous sticks in them and press the sesame seeds with the flat side of a knife. This will help the grains stick better during frying.

Fill a heavy frying pan about 5 mm high with olive oil and fry the couscous sticks over medium heat for about 5 minutes until golden brown on both sides.

Drain the couscous sticks on paper towels before serving.
