For the Walser Riebel, rinse a medium saucepan with cold water to prevent the milk from scorching. Add milk and a pinch of salt to the pot and heat. Once the milk is in the pot, add the butter.

When the milk reaches the boiling point, turn down the heat and slowly stir in the semolina. You can serve the Riebel as in the picture, or serve the Walser Riebel with a little applesauce or honey.
