Warm the butter in a fondue caquelon or possibly an enameled frying pan. Add the onions and steam until golden. Then add the bread cut into cubes and steam briefly. Add the milk and cook gently, stirring, for about 10 minutes. Season with a little salt, pepper and nutmeg. Grate the cheese with a rösti grater and add it to the mixture, stirring constantly, until it is creamy.

Serve immediately.
