Cut meat into narrow strips and fry in a very hot frying pan with olive oil for 2 min. Season with pepper and salt. Transfer to a plate and keep warm.
In the same frying pan, fry onions and mushrooms in butter until golden brown and extinguish with 2 tbsp red wine and the sauce. Add jam, juniper berries and vinegar and reduce. Add the meat stock and whipped cream, let it boil, warm the meat in the sauce and serve.
Blinis: Mix the room-warm ingredients with the milk and place on the heating for 30 minutes, covered with foil. Stir the dough gently, it should have the consistency of thick pancake batter, if it is too thick, add a little more milk. Add clarified butter to the hot frying pan and fry the dough by the tablespoon for two minutes on each side until golden brown.
