For the chia cream cheese dumplings, mix the egg, cream cheese and chopped parsley well with the mixer, season with salt and pepper. Add the chia seeds and let them swell a bit (about 10 minutes).
Then mix in the breadcrumbs with a spoon and let it sit for a few minutes. The mixture is relatively firm. Form small dumplings from the mixture.
Boil them in salted water for about 5 minutes and then let them simmer for about 5 minutes. The dumplings are ready when they float to the top. Depending on the size up to 16 dumplings.
