For the cauliflower gratin, divide the cauliflower into roses, cook in salted water until just tender and drain. Place in a buttered gratin dish.

Add the ham to the béchamel sauce and season well with salt and freshly ground pepper. Pour over the cauliflower florets and sprinkle with cheese and breadcrumbs. Now gratinate the cauliflower gratin in the oven under the broiler for about 15-20 minutes.
