For the snowflakes, mix the dry ingredients starch, flour, powdered sugar (sifted) and salt in a bowl. Roughly dice the butter (or baking margarine) and add to the dry mixture.

Knead until a smooth dough is formed. Cover the finished dough with plastic wrap and let it rest in the refrigerator for about an hour.

Towards the end of the resting time, preheat the oven to 175 °C (convection oven) and prepare two baking sheets with baking paper or baking foil. Quickly form small balls from the cold dough and place them on the trays.

Flatten the balls a bit with a cake fork, dipping the fork in water every now and then to prevent the dough from sticking. Bake the snowflakes very lightly, they should take on very little color so that they remain nice and melty.

After baking, let cool and store in a cookie tin.
