For the baked fruit, carefully sort the berries, halve larger strawberries. Pit the apricots and cut them into coarse pieces. Place the fruit in a baking dish.

For the topping, whisk the yolks, whip the cream until stiff. Mix the yolks, buttermilk, orange peel powder and vanilla sugar and carefully fold in the whipped cream. Pour the glaze over the fruit.

Bake in the preheated oven at 220 °C for about 15 minutes. Sprinkle the baked fruit with powdered sugar and serve while still hot.
