For the Beef Tatar, chop all ingredients very finely and mix with the beef mince. The liquid ingredients, such as mustard, Tabasco, soy sauce and brandy rather mix in at the end.
Mix until the entire tartar has a creamy consistency and can be transferred to two or three small round bowls. Then chill in the refrigerator for at least 1 hour to allow the meat to take on the good flavors of the ingredients.
To serve, simply arrange a leaf of lettuce and 4 small tomatoes on a plate. Turn the tartare out onto it and place the slices of butter on the side. Sprinkle with parsley.
