For the gorgonzola schnitzel, mix gorgonzola, gervais and herbs. Pepper, form small cutlets, pull through the eggs and turn in flour.

Fry the cutlets in vegetable oil until crispy and drain on kitchen paper.

For the salad, mix all ingredients and let marinate for 10 minutes. Salt, pepper and arrange with the Gorgonzola escalopes.
