For the celery salad, peel, wash and halve the celery bulb. Boil until tender in salted water to which the juice of half a lemon has been added.

Strain, saving the cooking water for soup. Allow the bulb to cool and finely chop. Mix with the onion cubes, salt, vinegar and oil.

Garnish the celery salad with some greens and serve.
