Instructions:

Remove any bones from redfish fillets. Place on a piece of tin foil, season with salt and pepper, season with lemon and top with a large piece of butter. Close the foil and place on the broiler for 10 minutes.

Cut the white and light green of the spring onions into narrow strips. Place char fillets on aluminum foil, add scallions and mushrooms – season with lime juice and add herb butter. Close the foil and put it on the broiler for 10 minutes. Eat directly from the foil. Serve with fresh baguette or grilled baked potatoes.

For the herb butter: Sauté the garlic in olive oil with the shallots cut into tiny pieces, stirring gently. After 5-6 minutes, add to the butter form, kitchen herbs and sea salt, maybe a little olive oil and stir.

Chill: fresh thyme and rosemary can also be used as culinary herbs.
