Peel and rinse the potatoes and cut into slices. Heat clarified butter (1) in a large frying pan. Roast potatoes in it for about 20 minutes, turning until golden brown. Peel garlic clove and cut into slices. Clean and rinse bell bell pepper and leek. Cut peppers into coarse strips and leeks into rings. Season potatoes with salt and pepper and remove from frying pan.

Add clarified butter (2) to the frying pan, sauté garlic and vegetables for 5 minutes, turning. At the end, add a little bit of water and swirl a little bit. Season with salt and pepper. Dice the feta cheese. Add potatoes, feta cheese and thyme to the frying pan and heat.
