A simple but delicious cake recipe:

Lightly toast the oatmeal in a frying pan without fat.

Finely dice apricots, chop raisins and soak both in Amaretto.

Cream butter, honey and vanilla, stir in egg. Add oat flakes, flour and baking powder to the butter mixture form. Add the preserved apricots and raisins and almond kernels and let sit for about 20 minutes.

Form walnut-sized balls from the dough (it’s best to wet your hands first) and place them on a baking sheet lined with parchment paper. Bake in a heated oven at 180 °C for about 15 min.
