Remove skin from pears, cut in half lengthwise, remove stems and core.
Place in a buttered gratin dish, flat side down, baste with juice of one lemon and spread 1 tablespoon butter evenly on each half. Stir sugar, white wine and raspberry syrup in a bowl, pour over pears and sprinkle with coarsely chopped almonds. Cook in a hot oven at 210 °C (gas mark 7) for 25 minutes.
Pear gratin can be served lukewarm or cooled.
