For the wine pears, bring red wine, water, lemon juice, cloves and cinnamon bark to a boil. Peel the pears, cut them in half (do not remove the stems), remove the core and let them steep in the broth for about 10 minutes.

Remove and let cool.

Whip egg yolks with pear syrup, fold in whipped cream and add almonds and rum.

Cover the wine pears with the cream and serve garnished with chocolate.
