For the cream of pumpkin soup, cut the pumpkin in half, remove seeds with a spoon, do not peel, cut into coarse pieces.

Boil water, dissolve vegetable soup cubes in it.

Add pumpkin pieces, cover and cook over low heat for about 10 to 15 minutes, depending on size.

Puree finely with a hand blender or stand mixer until no pieces of peel are visible.

Season with salt and pepper.

Arrange in deep plates, drizzle pumpkin seed oil over the top and carefully stir a little into the soup for decoration.
