Coarsely crumble the cheese. Peel and finely chop the onion. Peel the garlic and cut into slices, the rinsed chillies into rings.

Select spinach, rinse thoroughly.

Heat olive oil in a wide saucepan, sauté onion and garlic until light yellow. Add spinach, cover with lid and sauté until it collapses. Season with salt, chilies, pepper and a little bit of grated lemon skin. Rinse mint, pluck leaves, set a few aside, finely chop remaining and mix into spinach.

Spread the spinach between the pancakes prepared according to the basic recipe, sprinkle with cheese and heat again briefly in the oven.
