Instructions:

For the short pastry, beat the butter with the sugar and vanilla bean pulp until fluffy, then add the egg yolks one at a time and continue beating. On low mixer speed, stir in the sifted flour.

For the topping, peel, quarter and core the apples and mix with the sugar, rum and cinnamon. Cook in a hot pan for 10 minutes, stirring several times.

For the crumble, knead all the ingredients with your hands in a bowl until small lumps form.

Butter a springform pan (diameter 28 cm), flour it and line it with the shortcrust pastry up to the rim.

Pour the apple mixture into the springform pan lined with shortcrust pastry and sprinkle generously with crumble.

Bake in the preheated oven at 160 °C convection oven for approx. 45 minutes.
