Spring Rolls with Salmon & Spinach

Instructions:

Clean spinach, rinse thoroughly and dry. Peel and finely dice the shallots and garlic.

2. rinse salmon fillet, dry, cut into small cubes and season with salt, pepper and juice of one lemon.

3. defrost pastry sheets covered with a wet dishcloth. Heat sesame oil in a wok. Sauté shallots and garlic in it. Add spinach and drop together. Deglaze with soy sauce and fish sauce. Remove spinach from wok, cool. Stir in salmon cubes.

4. spread salmon spinach mixture evenly on center of pastry sheets and brush all around with egg white. Wrap sides, tightly roll up dough.

5. mix wasabi with mayo and yogurt until smooth, season dip strongly with salt and freshly ground pepper.

Fry the spring rolls in hot oil until golden brown and crispy. Drain on kitchen roll and serve with the wasabi dip.
