First, remove the steak from the refrigerator about an hour before use.
Season with salt and heat oil strongly in a pan.
In the meantime, preheat the oven to 180 °C.
When the pan is hot, add rosemary and garlic cloves and fry the steak for 2 1/2 minutes on each side.
Then transfer the steak to an ovenproof dish and let it sit in the oven for 10 minutes.
Season with pepper and serve.
