* Preferably rump steak or rump steak.
Cut steak from the butcher into 1 to 1.5 cm thick slices. Score the fat edge so that it does not curl during frying. Salt, season with pepper and roast in clarified butter for 1 minute on each side. Wrap in aluminum foil – rest 2 min for juices to collect, and bring to table with arugula vegetables.
To do this, rinse and dry arugula and pluck into bite-sized pieces. Sauté in olive oil with sliced mushrooms and shallots – season with balsamic vinegar, a tiny bit of salt, pepper and lemon.
Put the steak on a plate – add the rocket and sprinkle with a little bit of ground pepper.
You can get clarified butter by heating it slightly, the whey will settle out – the rest is clear – can’t burn.
